You know the food is good if the menu is handwritten.

No fancy branding. No overthinking. Just smoke, seasoning, and somebody back there who knows exactly what they’re doing. This week we had another food truck roll through — and this one came representing Memphis BBQ the right way.

The Order

I went with the St. Louis style ribs, and shoutout to the truck chef — he recommended them because you get the most meat for your money. That right there already told me something. They weren’t just selling food… they were helping you get the best experience.

First Impressions

Soon as you open the container… That smell hits you. That real smoke. Not flavoring. Not shortcuts. Smoke.

The ribs were sauced heavy — but let me be clear: 👉 I asked for extra wet. And they delivered. They also offer them dry, and after tasting their rub (called “Comeback”), I already know that dry version hits too. And yeah… I tried to get the secrets. They smiled. Didn’t give up a thing. Respect.

The Taste

That balance is key. A lot of spots lean too sweet. This one didn’t. This was grown-man BBQ flavor. And the texture? Man listen… That meat pulled off the bone so easy I turned it into a rib sandwich on the spot.

The Coleslaw

Now this part surprised me. At first glance, it looked a little… engineered. Like it had been chopped down to stretch. But after tasting it? 👉 Homemade. No question. I do wish they left it a little less chopped for texture — but flavor-wise? Solid.

The Price vs PQV

Alright… here’s the honest part. This plate came in at $27. Now normally? That would trigger the PQV alarm immediately. But this time… It didn’t feel like I got ripped off. Because the quality made you pause and say:

“Yeah… the cook gotta get paid.”

That’s a different kind of reaction. Now let’s be real though. If this same plate was $20? 👉 This becomes a run-it-back, bring-a-friend, regular stop

At $27? 👉 This becomes a treat-yourself experience And there’s nothing wrong with that.

The Bigger Picture

What I appreciated most? This wasn’t just food. This was Memphis BBQ being represented properly. On a food truck. On a random day. At work. That matters. Because when you’re talking BBQ, Memphis isn’t just a location… It’s a standard. And they upheld it.
